Dom Perignon Releases 2000 P2 Vintage

Via Imbibe Magazine, Dom Pérignon launched its next installment of of P2, with the 2000 vintage in the UK. The Plenitude series is based off the Dom Pérignon premise that a Champagne can reach new “plateaux” when not immediately disgorged after the second fermentation, and instead is left to continue actively maturing. Dom Pérignon chef de cave Richard Geoffroy continues to monitor the wine over the span of years to determine when the wine has reached a new optimal period of radiance.

This 2000 P2 release follows the 2000 P1 release in 2008. Due to a sunny harvest, the Pinot Noir and Chardonnay grew equally well. They are present in a 50/50 ratio in the blend, resulting in a very balanced blend.

Tasting notes of the new vintage via Imbibe highlight vibrant aromatics including “spice and candied peel”, a “mineral/saline note”, and “grapefruit zest”.

The 2000 P2 will be available in July 2017.
